Cheeky midweek make for Shrove Tuesday (Pancake Day).
Basic pancake batter
110g plain flour
1/2 pint of milk
Pinch of salt
Sift the flour and salt into a mixing bowl.
Make a well in the flour with a spoon and drop in a lightly beaten egg.
Gradually adding the milk, whisk until all the milk is incorporated and the mixture is smooth and lump free.
Fry lightly on each side and top with whatever you fancy.
Unfortunately, pancakes aren’t the most photographic of foods.
